Easy Summer Dinner

 This recipe is so simple and quick, we love it on a hot Summer day. Hope you like it too!
Cold Cous Cous Salad

Grilled Shrimp

Cool Iced-Tea
Cous Cous:
1 box cous cous-follow directions on box. I add sea salt and olive oil to the water.
When cous cous is cooked, fluff with fork and refrigerate until cold. Once cold, add the following ingredients:

Fresh parsley-wash and snip, 3/4 cup
Grape or Cherry Tomatoes-wash and slice, 1 cup
Cucumber-peeled and diced, 1 cup
Sea salt-to taste
Olive oil-to taste, add a little at a time until you have preferred amount.
This serves 4-6 people.

Grilled Shrimp:
Shrimp-Peel and clean desired amount
Light Italian Dressing
Toss shrimp in bowl with dressing until coated
Skewer shrimp
Grill

I just happen to have some cous cous in my pantry. I hold a stitching group at my home on Thurs. Everyone brings potluck. I am going to give this a whirl. Thanks for sharing. I love any kind of shrimp, but those look especially delicious.
