Pasta, Scallops, Broccoli & Sun Dried Tomatoes-Simple

This meal is so simple! 
Who doesn't like that?
I don't really plan meals ahead of time,
but I make sure to keep my kitchen stocked with all things healthy and tasty.
That makes it easy to whip up dinner in no time.




Pasta, Scallops, Broccoli & Sun Dried Tomatoes

Pasta, 1 lb. box, I used Barilla White Fiber Spaghetti
Sea Scallops, 1 lb.-saute in olive oil
Broccoli, 2 cups-saute in olive oil
Sun Dried Tomatoes-I used about 6 large slices and sniped them into small pieces
Lemon Juice, fresh squeezed, I used 1 whole large lemon
Kosher Salt, to taste
Pepper, to taste
Garlic Powder, to taste
Olive Oil

I usually chop my broccoli and cut up the sun dried tomatoes first, then set aside. Prepare pasta according to instructions on the box. While the pasta is cooking I saute the broccoli, add salt and garlic powder to taste. Then I put the broccoli in a large bowl, one which will hold all the ingredients. Toss snipped sun dried tomatoes in with the broccoli. Rinse scallops well and pat dry with paper towel, saute for about 1 1/2 minutes per side. I add a little salt to the scallops. Toss in with broccoli and tomatoes. When Pasta is done drain and add to bowl. ( I reserve about 1/4 cup of the pasta water and add to bowl.) Combine ingredients, add salt and pepper, drizzle with olive oil until lightly coated and squeeze lemon over dish and give another toss.
Simple, quick and healthy!

Snow Day! Time To Create

What are you up to today?
Another storm has passed through, 
looks like about a foot of snow, topped with freezing rain.
Of course I couldn't go out, so I spent some time in my art room.
A good day for taking some photos, rearranging my supplies,
 rethinking a few pieces of jewelry in the works.






Spending my day dreaming about future creations, hmmmm....

Napping In The Sunshine

of course it was on the bed...

As I write this post, he's back on the bed cuddling up in the blanket :)

Pasta, Shrimp & Veggies-Easy, Healthy And Quick!

Looking for an easy, healthy and quick meal?
I know I am.
 Although I love to cook, there are definitely days
when I look into the cupboards and groan "What am I going to make for dinner?!"
This pasta dish is super easy and tastes great.
And, it's healthy.
Another family favorite!
I hope you enjoy it too.



Pasta With Shrimp And Veggies

1-12 oz. box pasta (I use the high fiber pasta), boil
1 lb. shrimp, saute
2 cloves of garlic, thinly sliced, saute
1 onion, chopped, saute
1 cup orange peppers, sliced into strips, saute
1 cup red peppers, sliced into strips, saute
2 cups broccoli, chopped, saute
Olive oil
Fresh shaved parmesan (to taste)
Garlic powder (to taste)
Hot pepper flakes (to taste)
Kosher salt (to taste)

Wash and prep veggies. Heat oil in pan (I used a wok for this) and saute garlic on high heat. Turn down to medium high and toss in broccoli. I don't cook the broccoli long-we don't like it soft! When finished, put into large bowl and set aside. At this time boil your pasta according to the box instructions. Saute the remaining veggies-onion and peppers, on medium high, to desired consistency. Add salt, garlic powder and pepper flakes to veggies while cooking. Add veggies to bowl. Saute shrimp on medium high until pink. Add shrimp to veggies. When pasta is done, drain and add to wok along with veggies and shrimp, over medium high heat toss and add parmesan. Turn off heat when ingredients are combined and serve.

Farro-A Simple Meal

Farro is one of my favorite grains. It's easy to cook and versatile. 
I usually prepare it like risotto and toss in whatever fresh vegetables are in my kitchen.
Once in a while I'll add chicken, but that's not often. Typically I stick with grains,
lentils, nuts, veggies and fish. So, it's up to you, add what you like!




Farrotto With Chicken, Broccoli, Onion, Peas and Spinach

2 cups pearled farro
6 cups (approximately) broth-vegetable or chicken, your choice.
1 cup white wine (approximately-Plus a glass more to enjoy while cooking! I use Chardonnay or whatever is opened)
2 garlic cloves-thinly sliced
2 cups broccoli-chopped & sauteed
2 small onions-chopped
1 cup peas-steamed
1 cup spinach-steamed
1 cup sauteed chicken breast-cubed
Kosher Salt
Grated Parmesan
Olive Oil

Heat olive oil over medium high heat in a stainless steel pot. Add thinly sliced garlic and chopped onion, saute until translucent. Lower heat to medium and toss in farro, stir until coated with oil. Add broth 1 cup at a time, stirring until it absorbs and farro begins to soften. Stir in wine 1 cup at a time. I usually cook this for about 45 minutes in total. Once farro* is ready toss in vegetables and chicken. Top with parmesan and serve.

*Farro has a chewy consistency.

Remember, you can make this dish your own. If you don't like broccoli don't use it, if you love it use more. Experiment!

Tiny Wreath's

I love these tiny grapevine wreath's for holiday decorating.
They are so easy to embellish and they're inexpensive.
I buy mine at Michael's. 




The 2 photo's below are wreath's I made last year.
So cute! Don't you think?


All I did was hot glue tiny pinecones to the wreath above.
And, added a sprig of Boxwood, a few pinecones
and a tiny fabric bow to the wreath below.


How's your decorating going?

If the weather permits, we'll be going to cut ours down next weekend.
Just waiting for the kids to finish finals and come home so we can go together.

Tissue Paper Christmas Tree

As promised, here's another Christmas tree I made recently.
Again, this is soooooo easy!
The foundation is a cone made from 100# Bristol.
 I simply twisted decorative tissue paper and attached it with hot glue.

Voila!

Simple, right?

Kinda looks like a beehive, but I like it.
It's different!

Decoupage Christmas Stars

Yes, I'm at it again. 
I've been creating more Christmas decorations!
Take a peek at the pretty stars made from cardboard stars, tissue paper
and decoupage finish.







This was another really easy project.
The tissue paper was one of my purchases from the stationery store
where I bought the paper for the Christmas tree I posted recently.
The cardboard stars are from Michael's, as is the decoupage finish. 
The bows are from scrap ribbon and a few strands of burlap. (I keep everything...)
I simply cut out various sizes of tissue paper, brushed a small area of the star with decoupage and applied the pieces of tissue. Once applied, I painted over the tissue with decoupage and continued the process until the star was completely covered. Then I left it to dry over night. Once dry, I used a hot glue gun to apply a ribbon.
See, very easy!

I'm working on a few more decorations which will be posted soon, along with the trees I promised to post too. Now I have to think about my Thanksgiving menu! I'm cooking again this year and hope to get some grocery shopping done tomorrow. I've been perusing Pinterest every night pinning tasty dishes to my Thanksgiving board. Pretty Paper Christmas Tree

I know, I know, Christmas is after Thanksgiving, but I couldn't resist
showing you this pretty paper tree!
This paper caught my eye while visiting a stationery store.
Not sure what I would use it for, I had to have it (along with a few others).
Going into a paper store is like going into a candy shop, at least that's how I see it.


This pretty tree was super easy to make. I made a cone out of 100# Bristol,
and taped it with clear packing tape. Then I cut out strips of my decorative paper
and glued them in rows around the cone. I create, just like I cook-I wing it until I like the outcome.
There are 2 more trees in the works, just need to take some photos. 
Maybe I'll hold off until after Thanksgiving!
